There's nothing quite like homemade soup, and this creamy broccoli soup really delivers. When you want to make soup but don’t have a lot of time, this is the recipe you need. It takes less than 30 minutes to make and it has a delicious creamy texture, yet is dairy-free. Pureeing broccoli and chicken broth with a small amount of oats thickens the soup and creates the luscious texture we crave, without adding any heavy cream. Ingredients

  • 1 tablespoon olive oil

  • 1 medium onion, halved and sliced

  • teaspoon ground nutmeg

  • 4 cups reduced-sodium chicken broth

  • cup rolled oats

  • 1 ½ pounds broccoli, florets separated, stems peeled and cut into ½-inch rounds

  • Coarse salt and ground pepper

Directions

  1. Cook onion, add nutmeg:

    In a large saucepan, heat olive oil over medium-low heat. Add onion, and cook until softened, 5 minutes. Add nutmeg; cook until fragrant, 30 seconds.

  2. Add broth, water, oats, and broccoli:

    Stir in broth, 1 1/2 cups water, oats, and broccoli. Season with salt and pepper. Bring to a boil; reduce heat. Simmer until broccoli is tender, 5 to 10 minutes.

  3. Blend soup:

    Puree soup in batches, filling blender halfway. Return to pot. Season with salt and pepper.
