Generally, any recipe or baked good that is triple chocolate uses three types of chocolate, but what those types of chocolate are varies. A triple chocolate brownie cup could be made with semisweet, milk, and white chocolate, or with cocoa powder, semisweet, and bittersweet chocolate. The former would be much sweeter and lighter in color than the other, which would have a much deeper chocolate flavor. Also, whether you use chopped chocolate or chocolate chips makes a difference; chocolate chips have added stabilizers, so they hold their shape in baking, whereas chopped chocolate, whether bittersweet or milk, will melt in the batter. For these brownie cups, we use equal amounts of chopped bittersweet chocolate, milk chocolate chips, and white chocolate chips. There's also a small amount of unsweetened cocoa powder, so we could call them quadruple chocolate brownie cups. The combination of the different chocolates gives them a deep chocolaty flavor with plenty of sweeter spots of milk and white chocolate. Ingredients 1 stick unsalted butter, cut into large pieces 6 ounces bittersweet chocolate, coarsely chopped (1 cup) 1 ½ cups sugar 3 large eggs ¼ cup unsweetened cocoa powder ½ teaspoon kosher salt ½ cup plus 2 tablespoons unbleached all-purpose flour 1 cup (6 ounces) milk-chocolate chips 1 cup (6 ounces) white-chocolate chips Directions Rachel Marek Preheat oven, prep pan, and melt butter and bitttersweet chocolate: Preheat oven to 350F. Line twelve 2-1/2-inch muffin cups with paper bake cups. In a heatproof bowl set over (not in) a pot of simmering water, melt butter and bittersweet chocolate, stirring until smooth.
