Watermelon, Orange, and Feta Salad

A watermelon-feta salad is one of the most refreshing, salty-sweet combinations we know. Ours is quick to prep and doesn’t need any time to marinate—simply assemble, serve, and enjoy. It’s a reviving dish for a hot day and a lovely pairing with grilled fish or chicken for dinner. Use this recipe as a guideline, adding more watermelon or feta as you like. You can even double it to serve a crowd. Don’t skip the fresh herbs—parsley, mint, or basil are all excellent in this salad, and each brings a different bright contrast.

Ingredients

  • ¼ a small (6-pound) seedless watermelon, rind removed, flesh cut into ¼-inch slices

  • 1 large orange, peel and pith removed, flesh cut into segments

  • ¼ small red onion, thinly sliced

  • 2 ounces feta cheese, thinly sliced

  • ¼ cup fresh parsley leaves

  • 4 teaspoons extra-virgin olive oil

  • Coarse salt and ground pepper

Directions

  1. Arrange fruits, onion and cheese:

    On a serving platter, arrange watermelon, orange, red onion, feta cheese, and parsley.

  2. Drizzle with oil and serve:

    Drizzle with olive oil and season with salt and pepper.
